However, as great as these prep tables are they often come with problems that require constant maintenance.   The UST7218-RR-SB from Traulsen is one of most popular and efficient products. The exterior and back is constructed using stainless steel and the interior uses anodized aluminum. It has 2" thick, high density, non-CFC, foamed in place polyurethane insulation located throughout the cabinet and doors. A roll-top lid that can serve as an over shelf is included. The doors include both a self closing and stay open mechanism. Each model is supplied with a full complement of 4" deep, plastic, 1/6 size pans and dividers. This prep table exclusively comes with the ability to hold 6" deep top pans and keep them at a safe and nice temperature for your customers. A 12" deep, full-length, reversible white nylon cutting board is also included.

 

  The front breathing design means it can be pushed against a wall or placed alongside any other cooking equipment -- saving you valuable space. It's rear mounted and uses R-134a refrigerant with a 1/4 hp compressor. The standard operating temperature is 34 to 38 degrees Fahrenheit.
